I don’t like watching the Food Network, though I have lots of friends, like Juan, who do, and I have formed a theory that most people who watch don’t cook… like Juan.  There are some exceptions, though.  Yesterday, my friend Gina, who is a great cook, was watching a show on pies. She learned the secret to making a great key lime pie.  Now, my Banana Cream Pie has won the Water Island Pie Baking Contest… twice, but the pie I’m requested to make most often is Key Lime.  I asked her what secret she learned, and she told me "you have to use one particular kind of key lime juice — Mark and Johns? Something like that." "Nellie and Joe’s?" "Yeah, that’s it." Nellie & Joe’s Famous Key Lime Juice. I’ve been using it for years.  The real secret is that Key Lime pie is ridiculously easy to make. If you can separate an egg, you can make a great Key Lime pie. The recipe is right on the bottle: Egg yolks, sweetened condensed milk, and 1/2 cup of Nellie and Joe’s.     I agree about the Key Lime filling. I watched the same show as Gina.) However, I have a pet peeve about the graham cracker crust that most people use. I think it’s a travesty!!! Only a REAl pastry crust will do for any of those custardy pies!
